Mocha Chia Pudding

Ingredients

For the chia pudding
3 tbsp chia seeds
1 shot of coffee 
just under 1 cup of almond milk
1 scoop Two Islands Chocolate pea protein
1 tbsp cacao powder 

For the avocado mousse
1 small avocado
2 scoops Two Islands Chocolate protein powder 
3 tbsp cacao powder
1tsp vanilla extract
1 heaped tbsp almond butter 

Method

For the chia pudding

Put chia seeds, protein and cacao powder into a bowl and mix together so that there are no clumps 

Pour the shot of coffee into 1 cup and fill the remainder of cup with almond milk 

Pour the coffee/milk into the bowl and mix together until combined. Set in the fridge for 30 min (or overnight)

For the avocado mousse

Place all avocado mousse ingredients into a food processor and blend until combined and it has turned into the texture of mousse 

Top avocado mousse on top of chia pudding, enjoy
