Prep time: 10 minutes
Cook time: chill 2 hours
1 cup rice bubbles
¼ cup honey
½ cup peanut butter
1 scoop Two Islands Chocolate Protein
Optional: 2 tablespoons butter or coconut oil (see notes)
1. Over low heat, combine peanut butter, honey and butter/coconut oil (if using); be careful not to let the honey burn
2. Stir in rice bubbles
3. Press into a lined square baking tin (or any container); make sure the mixture is firmly pressed down so that everything sticks together
4. Chill in the fridge for 1-2 hours, then cut into bars.
5. You could drizzle or dip these in melted dark chocolate too! Or even mix in cacao nibs or chocolate chunks into the rice bubbles in step 2.
Notes: Butter or coconut oil would help the mixture stick together better.
