Vanilla & Coconut Tart

Ingredients

Base 
1/2c oats 
1/3c almond meal
2t peanut butter 
1T coconut oil 
2t honey
Pinch of salt 

Filling 
250ml coconut milk (thick layer) 
2 scoops Two Islands Vanilla & Coconut Pea Protein
1t cornflour 
2t agar flakes

Method

Base
Blitz together in a food processor until it forms a dough. Press into four lightly greased mini tart tins and bake for approximately 10 minutes or until starting to brown. Allow to cool. 
Filling

Heat coconut milk and protein powder in a saucepan over a low heat. Once boiling mix in the cornflour and allow to boil for another 30 seconds before removing from the heat.

Add the agar flakes then pour the filling into the tarts cases.

Place in the fridge to set for atleast 3 hours. Once ready to eat top with your fave fruit.
