1 cup oat flour – (oats blended into a flour in the food processor)
2 scoops Two Islands Chocolate Protein Powder
1/2 tsp salt
2 Tbsp maple syrup
2 Tbsp coconut oil and 1tsp for cooking
1 1/2 cup dairy free milk
Berries, yoghurt, nuts and seeds to top/fill crepes.
1. In a bowl combine oat flour, chocolate protein powder and salt.
2. Add dairy free milk, coconut oil and maple syrup into a blender or food processor and combine all ingredients so you get a smooth consistency. Add in dry ingredients and blend further.
3. Heat a pan on medium/high heat and add 1tsp of coconut oil. Once oil has melted pour 1/4 cup of the mixture into the pan and tilt the pan, creating a thin layer. Cook until golden brown, then flip onto other side.
4. Fill crepes with coconut yoghurt, berries, nuts and seeds. Enjoy!
