Chocolate Rough Balls

Ingredients

1/4 cup gluten free corn flakes
1/4 cup raw unsalted cashews
1 Tbsp desiccated coconut

2 scoops Two Islands Vanilla & Coconut Pea Protein
5 dates (soaked in hot water)
1 Tbsp coconut oil
2 Tbsp cacao powder

Method

1. Blitz all ingredients in a food processor until the mixture starts to come together.  Roll into small balls and place in the freezer for 5 minutes.

2. Melt 1/4 cup of a good quality chocolate of your choice. Remove the balls from the freezer and dip one side in the chocolate and place on a tray lined with baking paper. You can also coat the whole ball in chocolate, or just drizzle over top if that’s your preference. 

3. Once dipped, pop them in the fridge for a few minutes to set.

4. Decorate how you like! 

5. This mix makes approx 8 balls, double the mixture if you want to make a bigger batch.
