Chocolate rough protein balls

1 serving (25 grams) Two Islands vanilla and coconut protein
1/4 cup gluten free corn flakes
1/4 cup raw unsalted cashews
1 tablespoon desicated coconut
5 dates soaked in hot water
2 tablespoons cacao powder
1 tablespoon coconut oil

1. Blitz all ingredients in a food processor until the mixture starts to come together.  Roll into small balls and place in the freezer for 5 minutes.

2. Melt 1/4 cup of a good quality chocolate over a double boiler. Remove the balls from the freezer and dip one side in the chocolate and place on a tray lined with baking paper. You can also coat the whole ball in chocolate, or just drizzle over top if that’s your preference. 

3. Once dipped, pop them in the fridge for a few minutes to set.

4. Decorate how you like - chopped nuts, coconut, cacao nibs.


This mixture makes approx 8 balls - double the mixture if you want to make a bigger batch.
