Coconut Raspberry Protein Bites
1 cup brazil nuts
1 cup desiccated coconut
1 cup freeze dried raspberries
1/4 cup @twoislandsco vanilla and coconut powder
8 tablespoons coconut oil, melted
6 tablespoons maple syrup
1 tablespoon water + more if needed
1/2 teaspoon vanilla essence
1. Add all ingredients into a food processor and blend together well.
2. Mixture will be quite fragile, feel free to add more liquid if needed.
3. EITHER - using a wet measuring tablespoon or the protein powder scoop, scoop mixture into the spoon and pack/pat it in and then gently tap it out to create the shape in the photos. Wet the spoon/scoop after each use.
4. Place bites onto a lined baking tray and freeze for 15 minutes to set. Once set, store in fridge.
