Easy Winter Crumble

Filling

1 medium-large apple

1 medium-large pear

1 teaspoon ground cinnamon

1 teaspoon ground ginger

1 teaspoon brown sugar

Squeeze of lemon juice

 

Crumble

½ cup of oats 

¼ cup of flour

¼ cup desiccated coconut

½ tsp ground cinnamon

75g butter, melted 

20 grams (2 scoops) Two Islands Collagen 

Preheat oven to 180C 

Core and cube apple and pear

Combine with cinnamon, ginger, honey and lemon juice 

Divide among three large ramekins (or a baking dish) 

For the crumble topping, combine melted butter with remaining dry ingredients and scoop over the fruit filling

Bake for 15 minutes, until the top is golden brown; make sure to use the middle rack in the oven to prevent the crumble burning quickly 

Serve warm with yogurt, ice-cream and/or a dollop of peanut butter!
