Mocha donuts

DONUT

1 cup almond meal
1/4 cup coconut flour
1 serving (25 grams) Two Islands chocolate protein
1 tablespoon tapioca flour
1 tablespoon instant coffee
1/2 teaspoon baking soda
Pinch of salt
3 eggs
1/4 cup maple syrup
1 tablespoon coconut oil
1/4 cup almond milk

GLAZE

1/4 cup coconut oil - melted 
3 tablespoons cacao powder
1/4 cup maple syrup

1. Preheat oven to 180 degrees fan bake.

2. Whisk all of the dry ingredients in a large bowl until there are no lumps.

3. Whisk the wet ingredients together in a bowl until smooth.

4. Combine the wet ingredients with the dry ingredients until combined but not overmixed.

5. Spoon the mixture into silicon (or lightly oiled) donut molds until no more than 3/4 full. Tap the tray to release any air bubbles and bake for approximately 15 (slightly longer for large molds) until a skewer inserted comes out clean.

 6. Allow to cool for 5 minutes before transferring to a cooling rack.

7. Combine glaze ingredients & pour over of donuts.
