Mocha Donuts

Makes: approximately 15 small donuts
Prep time: 5 minutes
Cook time: 15 minutes

1c almond meal
1/4c coconut flour
1Tbsp tapioca flour
2Tbsp Two Islands Chocolate Pea Protein Powder
1Tbsp instant coffee
1/2t baking soda
Pinch of salt
3 eggs
1/4c maple syrup
1Tbsp coconut oil
1/4c almond milk
1/4c coconut oil (melted) 
3Tbsp cacao powder
1/4c maple syrup 

1. Preheat oven to 180C fan bake.
2. Whisk all of the dry ingredients in a large bowl until there are no lumps.
3. Whisk the wet ingredients together in a medium bowl until smooth.
4. Combine the wet ingredients with the dry ingredients until blended but not overmixed.
5. Spoon the mixture into silicon (or lightly oiled) donut molds until no more than 3/4 full. Tap the tray to release any air bubbles and bake for approximately 15 (slightly longer for large molds) until a skewer inserted comes out clean. 
6. Allow to cool for 5 minutes before transferring to a cooling rack.
7. Combine glaze ingredients & pour over top of donuts once cooled. Enjoy!
