Salted Caramel & Apple Muffins

3/4 cup rolled oats 

1/4 cup Two Islands Salted Caramel Protein 

3 tablespoons coconut flour 

1 teaspoon baking powder 

1 teaspoon baking soda 

1/2 teaspoon cinnamon 

2 tablespoons coconut sugar  

2 tablespoons coconut oil, melted

1 tablespoons maple syrup 

1 teaspoon vanilla 

1 egg

¾ cup + 1 tbsp milk of choice

1 teaspoon apple cider vinegar 

½ cup finely diced apples 


½ cup cream cheese, vegan optional

1 tablespoon @twoislandsco salted caramel protein  

Preheat your oven to 180°C and line mini muffin tins  

Add your apple cider vinegar into your milk and leave to sit.  

Blend your rolled oats to a fine flour, add to a large bowl along with the rest of your dry ingredients and mix. 

In another bowl, mix your coconut oil, maple syrup, vanilla, soy milk and egg. Stir to combine 

Add in your wet and dry ingredients, mix to combine. If too dry add in another 1-2 tbsp of milk.  

Fold in your diced apples.  

Spoon mixture into your prepared muffin tins

Bake for 14-15 mins or until a toothpick comes out clean.  

Leave to cool, before frosting time!  

 Soften your cream cheese and mix through the 1 tbsp protein.  

 Frost your muffins, sprinkle with sliced almonds/walnuts and coconut sugar, and enjoy!
