Salted Caramel Squares

1 cup of Raw Cashew Nuts 
1 Cup of Almond Meal
1 Cup of Desiccated Coconut
1/4 Cup of Coconut Oil (melted)
1 tsp of Vanilla Extract

1 1/2 cups of Raw Cashew Nuts (soaked overnight, drained and rinsed)
1/4 Cup + 2 TBS of Water
1/4 Cup + 2 TBS of Maple Syrup
1/4 Cup of Coconut Oil
1 tsp Vanilla Extract 

2 Scoops of Two Islands Salted Caramel Protein Powder

Chocolate Drizzle (Optional)
2 rows of Whittaker’s Dark Chocolate


Line a baking pan with baking paper

Place all Base ingredients in a blender and blend until combined

Press mixture into the lined pan and place in freezer until firm

Blend the Filling ingredients together until smooth, pour over base and place in Freezer for 3-5 hours until firm and set

Remove from Freezer

Melt the chocolate in a bowl over a pot of simmering water (if using)

Pour melted chocolate over slice, moving back and forward in a squiggly pattern or any pattern of choice (You can also just pour the chocolate over the filling layer although you may need some extra chocolate for this)

Remove From Pan, Slice into Squares, Serve and Enjoy :)

Keep remaining slice in the fridge or the freezer
