2 servings (50 grams) of Two Islands Vanilla and Coconut Protein
5 egg whites
1/2 cup milk of choice
1 teaspoon vanilla essence
1 teaspoon baking powder
Additional toppings: white chocolate, chocolate chips, nuts, seeds, freeze dried fruit, berries, or any other ingredients you may like to add.
1. In a mixing bowl combine together protein powder and baking powder.
2. Add the egg whites, milk and vanilla. Ensure you mix well to remove any lumps, using a fork will help this.
3. Pour mixture into a coffee mug or medium sized ramekin and place in the microwave for 1 minute. Then continue cooking in 45 second intervals until light and fluffy. You need to stop microwave and stir at intervals to prevent overflowing.
4. Once cake batter is cooked top with your choice of toppings. I topped mine with white chocolate and freeze dried raspberries.
