Macadamia, Coconut & White chocolate slice

Base: 

1 cup macadamias 

1/2 cup almond meal 

1/3 cup shredded coconut 

2 tablespoons of coconut oil, melted

teaspoon vanilla extract 

 

  

Filling: 

1 1/2 cups cashews, soaked overnight  

1/2 cup coconut milk 

1/4 cup maple syrup  

25 grams (2 scoops) Two Islands vanilla coconut protein  

  

Top: 

- 80g white chocolate, melted 

  

Instructions: 

1. Begin by blending your macadamias, almond meal and shredded coconut together until there are no/minimal lumps. Once blended, add the rest of your ingredients and blend until well combined. Press down in a lined tray and place in the freezer. 

2. Blend all of your filling ingredients together until there are no lumps. Pour on top of your base and place back in the freezer to set.  

3. Once your slice has set, melt your chocolate and drizzle on top of your slice. Return to the freezer until the chocolate sets. Cut into squares and store in the fridge or freezer.
